Homemade Pork Tapa
The best authentic Tapa is fried till golden brown, not too garlicky, not too salty, not too sweet (hindi po yan Tocino). You should be able to taste the meat's flavor and not hide it by using extenders and strong spices. Yung mabibili sa mga turo-turo na Tapsihan pati na din sa mga commercial Tapa from grocery karaniwan dinadamihan ng asin, asukal o bawang para hindi halatang low-quality meat, at hindi na fresh. Ali's Tapa is comparable if not (arguably) better than Rufo's or Antonio's Tapa. Pag di masarap libre na! 😉
